  • 4 large flour tortillas (or corn tortillas for a crispier texture)
  • 1/2 lb ground beef
  • 1/2 packet taco seasoning mix
  • 1/4 cup water
  • 1/2 cup refried beans

For the toppings:

  • 1/2 cup enchilada sauce (or taco sauce)
  • 1 cup shredded Mexican blend cheese
  • 1/4 cup diced tomatoes
  • 2 tbsp sliced green onions
  • Optional: Black olives or jalapeño slices

Instructions

  • Cook the seasoned beef:
    • Heat a skillet over medium heat and brown the ground beef until fully cooked, breaking it up into crumbles.
    • Drain any grease, then add taco seasoning and water. Cook for 2-3 minutes until the seasoning is well mixed and the beef is coated.
  • Crisp the tortillas:
    • In a large skillet or griddle, heat a small amount of oil over medium heat.
    • Fry each tortilla for about 1-2 minutes per side until crispy and golden. Drain on paper towels and set aside.
  • Assemble the base:
    • Preheat your oven to 375°F (190°C).
    • Spread a layer of refried beans on one tortilla, followed by a layer of the seasoned beef.
    • Place a second tortilla on top to create the “pizza base.”
  • Add the toppings:
    • Spread a thin layer of enchilada sauce over the top tortilla.
    • Sprinkle the shredded cheese evenly over the sauce.
    • Add diced tomatoes, green onions, and any additional toppings you like (black olives, jalapeños, etc.).
  • Bake the Mexican Pizza:
    • Place the assembled pizzas on a baking sheet lined with parchment paper or foil.
