If the beef is not already sliced, freeze it for 20 to 30 minutes and then slice against the grain into 1/8-inch strips. The goal is paper-thin — thicker slices will not cook through in the pan-fry step. The easier move is to buy pre-sliced bulgogi or shabu-shabu beef from any Asian market.
