For the base:
- 4 large flour tortillas (or corn tortillas for a crispier texture)
- 1/2 lb ground beef
- 1/2 packet taco seasoning mix
- 1/4 cup water
- 1/2 cup refried beans
For the toppings:
- 1/2 cup enchilada sauce (or taco sauce)
- 1 cup shredded Mexican blend cheese
- 1/4 cup diced tomatoes
- 2 tbsp sliced green onions
- Optional: Black olives or jalapeño slices
Instructions
- Cook the seasoned beef:
- Heat a skillet over medium heat and brown the ground beef until fully cooked, breaking it up into crumbles.
- Drain any grease, then add taco seasoning and water. Cook for 2-3 minutes until the seasoning is well mixed and the beef is coated.
- Crisp the tortillas:
- In a large skillet or griddle, heat a small amount of oil over medium heat.
- Fry each tortilla for about 1-2 minutes per side until crispy and golden. Drain on paper towels and set aside.
- Assemble the base:
- Preheat your oven to 375°F (190°C).
- Spread a layer of refried beans on one tortilla, followed by a layer of the seasoned beef.
- Place a second tortilla on top to create the “pizza base.”
- Add the toppings:
- Spread a thin layer of enchilada sauce over the top tortilla.
- Sprinkle the shredded cheese evenly over the sauce.
- Add diced tomatoes, green onions, and any additional toppings you like (black olives, jalapeños, etc.).
- Bake the Mexican Pizza:
- Place the assembled pizzas on a baking sheet lined with parchment paper or foil.
- Bake for 8-10 minutes, or until the cheese is melted and bubbly.
- Slice and serve:
- Let the pizzas cool for a minute or two, then slice into quarters using a pizza cutter or sharp knife.
