  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter

For the filling:

  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 2 tbsp gluten-free all-purpose flour

Instructions

  • Preheat oven to 350°F (175°C) and grease an 8×8-inch pan.
  • Mix the crust ingredients and press into the pan. Bake for 15 minutes.
  • Whisk the filling ingredients, pour over the crust, and bake for another 20 minutes. Cool before slicing.
