For the crust:
- 1 cup gluten-free all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter
For the filling:
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup fresh lemon juice
- 2 tbsp gluten-free all-purpose flour
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8-inch pan.
- Mix the crust ingredients and press into the pan. Bake for 15 minutes.
- Whisk the filling ingredients, pour over the crust, and bake for another 20 minutes. Cool before slicing.
