Gluten-Free Snickerdoodles

  • 1 1/2 cups gluten-free all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp sugar + 1 tsp cinnamon (for coating)

Ingredients

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Cream butter and sugar, then mix in egg and vanilla. Gradually add the dry ingredients.
  3. Roll dough into balls, coat with cinnamon-sugar, and bake for 10-12 minutes.
