The cookware tells you everything. Shoyu chicken is a braise — a covered pot, low heat, an hour and change. Teriyaki chicken is a grill or a hot pan and a glaze brushed on at the end. They are different cooking methods that happen to share one ingredient. The shoyu in a shoyu-chicken pot has been reducing for an hour; the teriyaki on a teriyaki bowl has been cooking for thirty seconds. The flavors are almost unrelated.

Sugar is the second axis. A real Hawaii shoyu chicken is two-to-three parts shoyu to one part brown sugar; salty wins. Mainland teriyaki bowls reverse the ratio — sometimes one-to-one shoyu and mirin plus more sugar in the glaze — because they’re competing with white rice that’s plain and steamed. One sauce reduces to a savory braise; the other reduces to a candy. Cook both and you’ll never confuse them again.
